The 28th floor of SKY Towers is entirely occupied by Belgium’s highest restaurant. The natural serenity of the venue together with the stunning view of the North Sea and the Belgian coast are worth the trip alone. All the more so, when you learn that chef Dimitri Proost’s cooking is fully equal to this high-flying setting. The cuisine is depicted by subtly distinctive Japanese notes, illustrated by a juicy seabass served in a dashi made from fish bones, which he pairs with clams and a velvety smoked butter sauce. Natural and blissfully legible thanks to the subtle talent of a chef you can trust with flavours.
