Nestled inside the luxe Ritz-Carlton, Fearing's is elegant and dramatic. The handsome look may read traditional steakhouse but this flagship restaurant from Chef Dean Fearing isn't straightforward. Instead, the American menu with clear Southwestern influences is both complex and composed with buffalo and antelope along with classic-leaning filets. The dishes are surprising, offering bold flavors and new takes on the tried-and-true. Case in point? Their Lone Star mosaic, Fearing's take on carpaccio with tuna, wagyu beef, salmon, and barbecued eel composing a vivid plate resembling stained glass. Baklava S'more riffs on the campsite classic with puff pastry piped with milk chocolate pot de creme, pistachio marshmallow, and burnt rosemary ice cream for a refined finale.
