This chef is a traditionalist, who excels at classic dishes such as tournedos Rossini. He has a masterful ability to cook a leg of Dutch lamb to perfection, ensuring it is juicy and seasoned just right. However, he also has a modern edge, delighting diners with artistic plating and surprising textures. Think savoury crème brûlée or Jerusalem artichoke – as chips, as a cream, raw and pickled – with smoked eel.
